One of the things I love about having a podcast is getting to introduce you to people I love.
I met Kathi Lipp a few years ago when I was on staff for Proverbs 31 Ministries Online Bible Studies. Sometimes in ministry you meet people for just a minute and sometimes you meet people who stay in your life for a long time.
That’s Kathi.
She’s smart. She’s wise. And she’s figured some stuff out that I promise you are going to want to learn from her.
She’s my first guest for our How Does She Do It All series and her insights do not disappoint!

One of the easiest hacks I discovered is when I began packing school lunches for my girls. I freeze the drink/juice boxes the night before. In the morning, I pop a frozen box in the lunch bag. Helps keep the lunch cool and is usually all defrosted by noon.
When I purchase ground beef or sausage for recipes, I buy in bulk and cook (and season) it all at one time. I portion out what is needed for each recipe, vacuum seal/label it in food saver bags, and freeze it. Voila! I pull it out when needed and one of the messiest steps of prep is already done. Makes for an easy taco night, shepherds pie, breakfast scramble, and more! Follow the same concept when grilling chicken. Very easy to freeze extra chicken to pull out for fajitas, salads, or other recipes.
